4. Chiang Rai Charlies
Named after a man in the Thai northern city near the China border and part of
the infamous 'Golden Triangle' of Chiang Rai our Chef Dom met during his time
interviewing the Green Tea and Coffee growers of that region. Charly was a
crazy old man, but he always knew where to find the best places to eat
authentic Northern Thai food. Whether it was in a dirt floor 'Hilltribe" villagers
hut or the formal 'ka toke'/''pa khao' style where you sit on the floor and eat
from elevated round wood or rattan food serving pedestals.
5. Isaan Express
NorthEast Thailand Cuisine very popular with Thai people and to tourists alike
because of it's Mekong Delta/Laos influences.
Anymore authentic we would have to issue passport visas!
